Restaurateur Piero Selvaggio's edgy Italian cuisine is prepared by chef Luciano Pellegrini and executive chef Cunninghame West at PS Valentino Vin Bar, the Houston incarnation of Valentino Restaurant Group's eateries, with locations in Santa Monica and Las Vegas. The super-swank, slick red, black and white dining room and more casual wine bar within the posh Hotel Derek offer guests a variety of entrée and small plate options, as well as an extensive by-the-glass wine list. (Selvaggio is an Italian Wine Hall of Famer). As for the food, both Selvaggio and Pellegrini have won prestigious James Beard Awards.
