Beer nerds all over the city are descending upon the giant bar in the rear of The Hay Merchant — and in the banquettes, and hanging out on its patio and chilling by the darts, and so on and so forth. Known for their obsessive attention to details like glassware, temperature of said beer, selection of rare and cask beers and a focus on craft beer education, The Hay Merchant (from the same guys that started Anvil just down the street) is truly one of the best places to grab a brew. The beer isn't the only star, however. Sharing butchery space with Chris Shepherd's Underbelly, which is located on the other half of The Hay Merchant's building, makes the bar food worth a trip all by itself.
The crispy pig ears have become a must-have dish alongside a cold pint of ale.
