When it comes to being green, Randy Evans doesn't just pay lip service. He built one of the first LEED-certified restaurants in Houston, then designed a rotating menu around locally sourced and fresh ingredients. But this isn't a hippie, raw-food hangout. The menu is focused on clean, classic American flavors with modern interpretations, from appetizers like the shrimp corn dog with a Tabasco mash remoulade and the seared berkshire pork belly to the leek soup and entrees of free range chicken, wood-grilled chateau loin and grilled long-fin white tuna, Evans does his thing but lets his ingredients shine. The dining room is modern (think lots of bamboo) but not overly stark, and the service earns raves. Haven could be one of the new Houston standards.
Designer Zac Posen was an early guest when he was in town for a promotion, and loved Haven so much he and Evans became fast friends.
