Sommelier Evan Turner finally realized his dream of opening a modern Green restaurant in Houston. He and chef William Wright have updated traditional staples such as gyros (made with pork shoulder rather than lamb or beef) and dolmades (wrapped in collard greens instead of grape leaves). Elsewhere, the menu blends Texas proteins like snapper and rabbit with Greek cheeses and olive oils to deliver familiar flavors with new twists.
