Guilt- and gluten-free goodness: Vegan tacos worth a rainy trip to the farmers market
A Sunday morning hankering for freshly-baked bread and free range eggs seemed the perfect excuse to take my new bicycle on a trip to Urban Harvest's Eastside Farmers Market.
Unfortunately, a failure to check the weather forecast before departing left my boyfriend and me stranded under the awnings during an unexpected downpour. For company, we enjoyed an impromptu brunch out of paper trays from Ripe Market Café.
The weekly pop-up café is the newest endeavor from Stephanie Hoban, a local nutritionist-cum-food blogger who began serving up her seasonal vegan cuisine at the farmers market about five weeks ago.
On this week's menu was a pretty pineapple-garnished Sloppier Joe, made with organic green lentils and tempeh, and a healthy Ripe Cobb Salad with Green Goddess Dressing, but we opted for the Watermelon and Avocado Salad and the Cornmeal Crusted Avocado Tacos (which Hoban said are her most popular item — they've endured on the ever-changing menu since day one).
The salad was fresh and refreshing, with a tangy squeeze of lime, an added kick from finely-sliced red onion and a satisfying crunch from spicy pepitas. The tacos — wrapped in a soft, warm local corn tortilla — were filled with a generous helping of cornmeal- and oat flour-battered avocado and topped with chipotle 'crema,' made using cashews.
It was pure guilt- and gluten-free goodness and the perfect Sunday fuel . . . whether you prefer to spend yours nursing a hangover or running a marathon. And if we hadn't had to take advantage of a break in the rain to bike home, I would have gone back in for seconds.
