Finding a new Haven: Accident-recovered Linda Salinas lands a manager's gig
Get ready for a whole new Haven. Chef/owner Randy Evans is still offering his excellent take on Gulf-focused modern American cuisine, but a mix of new face and changing spaces is adding even more to the restaurant.
The first addition is Linda Salinas taking over as service manager. Salinas was well-known for slinging A-list drinks around town before a serious accident in April 2011 led the hospitality community to rally around her recovery. This is Salinas' first full-time gig since the accident, but not her first time coming out from behind the bar — she was a sommelier and beverage director at Voice and trained staff during the opening of Chez Roux.

Salinas tells Eater the fit with Evans was natural because they "see service the same way — it's about making relationships with people."
Another familiar face at Haven is sous chef Philippe Gaston, who has earned raves for his work in the kitchens at Kata Robata and Reef. To better show off Gaston's skills, Haven is creating a new, separate restaurant-inside-a-restaurant in the current bar space.
Currently unnamed, Evans told Greg Morago that the new concept will be an "international raw bar" and have its own entrance and menu featuring everything from ceviches, sushi and oysters to charcuterie and cheeses — basically anything that is prepared without heat. Speaking to Eater, Gaston described the future space as "an intimate lounge" with "tapas-style relaxed service."
The "dual-concept" restaurant is gaining traction in Houston — Seth Siegel-Gardner and Terrence Gallivan have similar plans for The Pass & Provisions, in the former Gravitas space.
“For us, it’s a way to tinker with ideas,” Evans said. Construction for the raw bar at Haven is expected to begin in the fall.
The transformation of the bar space doesn't mean Haven is giving up its craft cocktail program; Gaston tells Eater that the new concept will give bartenders even more room to be creative.
