Let the buzz begin: Bon Appétit names Underbelly among America's mostanticipated restaurants

Considering the national attention his work at Catalan inspired, it's no surprise that Chris Shepherd's forthcoming restaurant has more than just Houstonians chomping at the bit for a taste.
Exhibit A: Andrew Knowlton of Bon Appétit opened his little black notebook to share what restaurants nationwide he's dubbed the "hottest"openings of 2012, and Shepherd's Underbelly is front and center.
Now scheduled for a January opening, Knowlton notes that Underbelly is serious about its meat, planning "in-house charcuterie, on-premises butcher shop and fresh cuts of goat, lamb, veal and — of course — pork from his own herds."
Underbelly made the short list alongside new concepts from James Beard nominees and winners including Chicago's Stephanie Izard and Portland's famed Pok Pok — a good omen of things to come, we hope.
Bon Appétit isn't the only magazine giving Shepherd some early love. We hear that Southern Living has already shot a feature on Shepherd and Underbelly for an upcoming issue.
