Popular Houston waffle food truck rolls out new brick and mortar spot
One of Houston’s most popular food trucks has finally opened its brick and mortar restaurant. The Waffle Bus has entered a soft opening phase and will celebrate its grand opening Saturday, November 2.
Owner Phi Nguyen tells CultureMap that he originally planned for the restaurant to be open by now, but delays with his contractor and city permits changed the timeline. Still, he says he's excited to be serving customers at his new home.
“This is kind of the dream for a food truck,” he says. “We’ve worked for many years to make this happen.”
Despite the hold ups, both Waffle Bus fans and newcomers will find much to like on the restaurant’s menu. The options begin with staples from the truck's menu: buttermilk fried chicken and waffle, chicken thunder fries (fried chicken over waffle fries with spicy mayo and ancho chile honey butter), and “fryders,” mini sandwiches with waffles fries for buns.
Nguyen has also added items that had previously only been available as specials such as the chicken fried bacon BLT, smoked salmon waffle, and breakfast sandwiches. He’s also added cereal milk milkshakes in four flavors: Cinnamon Toast Crunch, Fruity Pebbles, Oreos, and Reese’s Puffs.
The restaurant will be open for lunch and dinner starting at 11 am daily. Although the front of the store has limited parking, Nguyen has secured a lot behind the building with approximately 80 spaces. The Waffle Bus will probably need them all on Saturday; people have been waiting for this opening for a long time.
“It’s been delayed so much,” Nguyen says. “I want to bring that excitement back. We’ve been soft opening now just to get it fine tuned. We’re expecting a good crowd.”
