Truth Barbeque collaboration at Ramen Tatsu-Ya
Arrive early to grab some Smoked Shoyu Tonkotsu Ramen, made with pit-smoked shoyu, a slab of brisket, ajitama (marinated soft-boiled egg) and menma (bamboo shoots). Ramen Tatsu-Ya’s signature tonkotsu broth — a condensed pork bone broth that takes more than 70 hours to make — will be enhanced with shoyu (a type of soy sauce) smoked by Truth Barbeque's pitmaster-owner Leonard Botello IV and, of course, some of Botello's acclaimed brisket. The two entities have twice collaborated on this dish, resulting in long lines and happy diners. Don't miss this; it's available from 11 am until sold out.
Outdoor cooking with LeRoy and Lewis BBQ at Eight Row Flint
The team behind one of Austin's best barbecue joints comes to Houston to present a special menu inspired by chef Evan LeRoy’s recent trip to China. Their Chinese-tinged menu features tingling akaushi brisket from Beeman Family Ranch, char siu pork ribs from Peaceful Pork, ramen slaw, barbecue fried rice, and sambal-spiced cucumbers. It's available from 5 pm until it runs out.
