A high-end Houston restaurant loses a major chef to TV
Houston restaurateur Ray Salti and chef Soren Pedersen are parting ways, ending a culinary relationship that helped to bolster the city's now thriving farm-to-table movement.
After working together at Salti's first venture, the local and organic Ray's Grill in Fulshear, the duo opened the popular Sorrel Urban Bistro in 2011 in the former Ziggy's Grill space on West Alabama.
Known for a menu that changes virtually every day depending on what area farmers had to offer, Sorrel earned a reputation for what CultureMap called "unexpected flavor pairings and complex presentations."

In late May, Pederson took his expertise to the small screen with Currant Kitchen — a television series aimed at teaching area residents how to purchase and prepare locally-grown vegetables and local farm-raised products.
"Soren has been focusing more and more on his cooking show, which was very time consuming" Salti tells CultureMap. "I don't want to get into too many details to make sure not to damage the restaurant's reputation and Soren's. He and I have had a good relationship for almost six years and we just decided that it was time he leaves."
In a statement he released, Pedersen said he will end his collaboration with Salti at Sorrel as well as his work for Ray’s Grill and its catering service Watercress.
“I am looking forward to devoting attention to Currant Kitchen, my local television show, and I’m grateful for the support of Sorrel Urban Bistro in launching the program," he said. "I’m excited about having the ability to pursue enticing new projects.”
Pedersen tells CultureMap via email that he hopes to be ready to discuss his future plans in the coming weeks.
In the meantime, Salti says Sorrel will more forward with its remaining lineup of chefs, all of whom already play regular roles in shaping the menu.
