Food Revival: Just 8 chefs celebrate new partnership with three upcoming dinners

Those of you lucky enough to secure a spot for last summer’s Just August Project probably still have lingering visions of the divinity sampled.
Well, great news: Two of the three renegade chefs behind Houston’s first pop-up restaurant are collaborating once again. Seth Siegel-Gardner and Terrence Gallivan have announced a new partnership — called Pilot Light Restaurant Group — which will focus on creating casual dining experiences in a contemporary setting. A press release states that “their food honors the familiar, while adding external unlikely elements and embellishments,” an idea which brings back fond memories of how expertly these chefs play with flavors, textures, and accoutrements.
The partnership’s first venture? Three BYOB dinners coming up at Revival Market on June 18, June 25, and July 2. And just how major are these meals? Think about how exceptional Siegel-Gardner’s plates were during his time at Kata Robata — Combine that with the outrageously creative dishes we saw from Gallivan at Just 8. And then add on top of that the fact that these two have a seriously jaw-dropping restaurant resume under their aprons: Gordon Ramsay at the London, Aquavit, the Fat Duck, Viajante, Alto, C‐House, Fiamma, August, the Modern, and Aureole, just to name a few.
That’s some serious star power, Houston.
But back to the dinners. Siegel-Gardner and Gallivan will combine their modern talents with Revival Market’s daily fresh produce, and we can only imagine the sensational culinary fireworks that will ensue. Tickets for the 20-person dinners are priced at $65 for five courses and will be available for purchase at Revival Market this Saturday on a first‐come, first‐served basis, starting at 4 p.m. Cash or check only.

One can only hope that the partnership announced today will also lead to a restaurant announcement soon... But it looks like we’ll just have to wait.
