Supper club gym: Partying takes a healthy turn at elegant dinner in workout studio

The 411:Henry Richardson, founder of Define Body & Mind workout studio, and co-owner and Define Foods' chef Erin O’ Leary Stewart hosted the second annual deliciously healthy event.
With the aid of event planning company Swift + Company, a classroom at the West University locale of Define, known for its holistic approach to wellness through barre, yoga and cycling classes, was transformed into an elegant dinner setting for 75 guests. Tables were adorned with burlap tablecloths, fresh greenery and flowers, and candles.
Supper clubbers were served a six-course meal by some of their favorite Define instructors, who shed their workout clothes for aprons. Chef O’ Leary Stewart's innovative menu of fare, served from an on-site kitchen, included black trumpet mushroom crisps (with herbed macadamia cheese, watermelon radish and apricot jam), posole soup (with whole broccoli, micro cilantro, maple-chili pepita and cashew creme) and house smoked Chilean sea bass (with crispy artichoke, pea puree, asparagus and mulberry).
Between courses, chef O’ Leary Stewart addressed guests on techniques used to prepare the dishes. As well, Richardson gave a short presentation on Define's principles of looking and feeling your best.
