Meet the Frenchman opening some of Houston’s best new restaurants, plus our latest trip to Golfstrommen
On this week’s interview episode of “What’s Eric Eating,” Sébastien Laval joins CultureMap food editor Eric Sandler to discuss his career. The native Frenchman has worked at restaurants throughout Houston, including La Table, MAD, and Le Colonial.
Currently, he operates Laval Consulting and is a partner in Upper Kirby French restaurant PS21 with chef Philippe Schmit. Laval begins the conversation by explaining how meeting his wife in France prompted him to move to Houston. From there, he shares what working as a consultant entails, citing his recent experiences with Albi, a Mediterranean-inspired fine dining restaurant in River Oaks, and Best Regards, the new lounge that’s opening in the Heights later this month.
Sandler asks Laval whether he ever tells a future client not to open a restaurant. Laval provides a very diplomatic response.
“Sometimes the restaurant is a passion project. They have a very clear idea of what they want to do, and making money is not the end goal,” he says. Later, he adds, “In the end, it’s like the producers of movie. That story they wanted to tell was more important than how much money they could make out of it.”
