Hotel ZaZa goes bold, hiring a new big-name chef with foodie clout
It's a tale as old as time — or at least as old as modern food culture. Chef without restaurant meets restaurant needing a new chef.
Jonathan Jones, fresh off a less-than-amicable parting from short-lived restaurant Concepción, tells CultureMap that he is taking a position as executive chef at Hotel ZaZa and its signature restaurant, Monarch. ZaZa's previous chef, Adam West, left the hotel earlier this summer to return to Dallas.
With Jones at the helm, the Museum District restaurant and hotel finally has a chef that Houston foodies know by name. Jones first gained recognition during his tenure at Max's Wine Dive, followed by notable stints at Beaver's and Xuco Xicana. According to Jones the hotel is planning to revamp the menu accordingly.

"I will start Monday and take two weeks to assess the team and menu," Jones tells CultureMap. "Its a large operation with many working parts so baby steps . . .
"They want a dynamic Fall menu based around farm to table produce and proteins and an aggressive Gulf to Table seafood program."
