Update on Hori-San going solo: Jean-Philippe Gaston bolts Kata Robata for Reef
Update: The mystery over the landing spot is over. It's official — Jean-Philippe Gaston is heading to Reef to work with Bryan Caswell. To say this is an exciting development is a huge understatement.
Any short list of the best sushi, seafood, or Asian fusion cuisine in Houston includes Kata Robata, which shines with heralded Manabu Horiuchi or Hori-san leading the kitchen with his divine raw bites.
The less well-known part of Kata Robata's success, though, is chef de cuisine Jean-Philippe Gaston, who takes the lead on the cooked part of the menu — with specials like pan-seared fresh Icelandic Arctic char with creamy turmeric masala sauce.
On working with Hori-san, Gaston told Eating Our Words earlier this year, "We spend so much time with each that we can communicate even by looking at each other's plates we are serving. I can tell if he needs foie gras, and he can tell to take care of a plate I sent out specially. It is truly a tag-team match"
But this dynamic duo's days are coming to an end. Gaston lit up the foodie Twitterverse late Wednesday night with the news he is leaving Kata Robata at the end of August.
Though his mysterious destination brought up some guesses — Austin import Uchi has come up, though it seems too early to depart for a late 2011 opening — Gaston hasn't yet revealed where he'll be getting his paycheck starting September 1.
One thing we know for sure: With this kind of talent, we just hope he's staying in town.
