More mag love: Michael Cordúa shows off his own Latin bites in Hemispheres

Can you keep all the appearances Houston chefs and restaurants are making in national media straight?If it's not Rebecca Masson in Southern Living, it's Brasserie 19 in USA Today.
The latest Houston toque getting some ink is Michael Cordúa, the chef and restaurateur behind Américas, Churrascos, Artista and Amazon Grill. Cordúa makes an appearance this month in Hemispheres, the inflight magazine of United and Continental Airlines.
It's not really a surprising endorsement, considering Cordúa has been a consulting chef for Continental for two decades, but the four recipes he contributes for his pinchos de churasscos — grape tomatoes with chimichurri, avocado croutons, seared Churrascos bites and cilantro-jalepeño mignonette — sound a lot better than any airplane food I've ever had.
