There may be nothing new under the sun, but when the moon is out there's a new kind of bar sweeping America. And for the newest big thing it's decidedly ... old.
As has been painfully obvious in Houston since the advent of Anvil Bar & Refuge just over a year ago, pre-prohibition cocktails are the trendy tipple, with hipsters ordering the same Old-Fashioneds, Manhattans and Gin Rickeys their grandparents enjoyed back in the day.
Bon Appetit took a tour of the nation's nouveau speakeasies in the August 2010 issue, and unsurprisingly named Anvil one of the top 10 new cocktail bars in America.
What makes Anvil special? The commitment to both tradition and innovation. Or as Bon Appetit puts it,
The shakers here have a thing for creativity (house-made ginger beer, habanero tinctures), but they also recognize the classics — hence "The List," 100 cocktails (from the Absinthe Drip to the Zombie) to try at least once in your life.
One thing's for sure: The wait for a drink isn't going to lessen any time soon.
