Following the lead of Pondicheri, Roots Bistro and Green Seed Vegan, Adair Kitchen will get in on the juicing craze when it opens AK Juice Bar on Monday morning.

Nick Adair tells CultureMap that the fresh-fare, Galleria-area restaurant has been well-received since he opened it with his sister, Katie Adair Barnhart, last fall, but juicing was not in the initial business plan.

"Our whole concept is geared toward fresh and health, the juice bar just fits in so well with all of that," says Adair, who has been experimenting with recipes over the past several months for choice fruit and veg pairings.

Menu items include the Kalelujah (with kale, spinach, celery, apple, pear, lemon and ginger), Just Beet It (with beet, carrot, apple, kale and parsley) and Ginger Spice (with spinach, carrot, green apple, celery, ginger and lemon).
