Waffle burgers and an Underbelly preview: Guest chefs take over The Modular
When celebrities want to stay relevant to show off their lesser known talents, they guest star on 30 Rock. When Houston's best chefs want to mix it up, they do a stint at The Modular.
The metallic food trailer is found most nights outside of Grand Prize Bar or Fitzgerald's and staffed by Josh Martinez and Lyle Bento. But on Wednesday night, Ricky Craig of Hubcap Grill is taking over in an event the guys have dubbed the "Hubcap-ular." On Twitter, Craig has promised to serve his infamous waffle burgers as well as a duo of pasta dishes.
After The Modular takes a night off on Thursday (to head to the Wu-Tang Clan concert), on Friday the "tin can" will be manned by Chris Shepherd and Antoine Ware.
On Twitter, Shepherd says they'll be doing "some cool things," which might include (do we dare dream it?) Catalan's foie gras bon bons.
"Shepherd hangs out around the truck and we did a tailgate with him a couple weeks ago, and that was really the final straw, he was like, 'That's it, I'm getting on the truck,' " says Martinez. "We wanted to get him in before it was too late, when he needed to be in the Underbelly kitchen full-time."
Martinez says Shepherd and Ware's menu hasn't been finalized, but that he's expecting Ware to preview a couple dishes from the Hay Merchant menu and Shepherd to make two he's working on for Underbelly.

The overlap between The Modular and Underbelly won't end on Friday, either. Bento will be working in the Underbelly kitchen when the restaurant opens, though Martinez says he will still be a partner and creating menu concepts for The Modular on his days off.
"The vision we've always had for the truck is chefs doing stints of two weeks, two months," Martinez says. The next chef that will be onboard is David Kauffman, recently of *17.
