    Boucherie In Houston

Cajun-style boucherie with top Houston chefs promises meat lovers a full belly and a smile

    Eric Sandler
    Mar 19, 2016 | 3:26 pm

"Whatever you thought you might be seeing, is going to be completely washed away the moment we bleed that hog out."

Toby Rodriguez, a chef/butcher from Grand Coteau, Louisiana, doesn't mince words when it comes to what happens at the Lache Pas Boucherie. On Sunday, Houston's Black Hill Ranch will be the second stop on a 20-city tour that showcases the traditional Cajun gathering where a pig is slaughtered and processed.

"Before there was refrigeration, before there was electricity, a single family didn’t just go pick up meat from the grocery store, they were killing their own animals. That’s strenuous labor that needs assistance. They would call outside neighbors or family and friends to assist in slaughtering, butchering, and processing that animal," Rodriguez explains. "Today, it’s done to preserve culture . . . we don’t have to rely on the boucherie, which is kind of unfortunate. It’s a very important part of our culture, and we don’t want to see it die."

Top Houston chefs like Danny Trace (Brennan's of Houston), Graham Laborde (Bernadine's), Jordan Asher (Ritual), and Greg Lowry (formerly of Pour Society) will all be on hand to help process the pig and prepare dishes with the fresh meat. Rodriguez worked with Cajun food expert Jim Gossen and Black Hill Ranch owner Felix Florez to identify Houston chefs with an expertise in this type of cooking. He explains that when he first started inviting chefs to participate in the boucherie many had only seen meat in its packaged form but the experience can be transformative.

"(They) had never felt meat at body temperature. When they get it, it’s already cold. To see a live animal die in front of them and that animal pretty quickly go from being livestock to meat and protein right before their eyes was pretty impactful. It sends them back to their kitchen pretty motivated, with their eyes opened," Rodriguez says.

Those with an interest in the farm-to-table movement or just knowing where their meat comes from are invited to attend Sunday's event. The all-day affair begins promptly at 8 am when Rodriguez slaughters the pig and lasts until about 4 pm. In between, the chefs break down the animal at eight different stations and turn in into a series of dishes that the crowd gets to sample. Tickets are $100.

"Things do not come out all at once. The dishes are done when they’re done," Rodriguez says. "There’s going to be a lot of anticipation when people are waiting for something to be done, then all of a sudden boudain’s done and everyone rushes over to gorge on boudain."

At a traditional boucherie, participants would leave with some meat as a reward for helping process the animal. With between 100 and 200 people expected to attend Sunday, that's not going to be possible. Still, Rodriguez does promise one thing.

"They’re going to leave with is a full belly and a smile."

Hive Food Co. is known for its infused honey.

After months of pouring over video submissions, H-E-B is entering the final leg of its annual grocery games. The San Antonio-based supermarket chain has narrowed down the finalists for its annual Quest for Texas Best competition, including three from Houston.

Ten innovative Texas entrepreneurs were chosen from a record-breaking 978 entries representing more than 500 companies spread across the Lone Star State.

Now in its 13th year, the contest asks Texas small businesses to put their best foot forward for the chance to win a combined $100,000 in cash prizes and the opportunity to be stocked on H-E-B shelves. Since the competition's beginning, the grocer has discovered more than 1,000 unique products, many of which have become literal household names.

“Quest for Texas Best is more than a competition; it is a launchpad for Texas entrepreneurs,” said James Harris, senior director of diversity & inclusion and supplier diversity for H‑E‑B, in a release. “H‑E‑B began as a small business, and we know firsthand how powerful the right opportunity can be.”

This year, the San Antonio and Houston regions were at the head of the pack with three finalist nods each. But the entrepreneurs hailed from all over the state — from border town Roma to Fort Worth suburb Haltom City. The top 10 hopefuls include:

    • Boerne — Coley’s Foods Inc., a frozen cookie dough company
    • Floresville — Dean & Peeler Meats, a beef producer known for its smoked Gouda sausage and Angus tallow
    • San Antonio — WFN Foods, maker of heat-and-serve taco fillings like beef barbacoa, pork carnitas, and carne guisada
    • Roma — In Your Smokin' Face, a spice company specializing in bold chile piquín and carne asada blends
    • Haltom City — Sol Dias, a gourmet paleta and Mexican ice cream company
    • Glenn Heights — Uncle Marc’s, a manufacturer of barbecue seasonings, rubs, and sauces
    • Houston — Doggie Express, a small-batch maker of decorated treats for canine celebrations
    • Houston — Big Bayou Cocktail Sauce, a saucy supplier branching out to Bloody Mary and margarita mixes
    • Houston — Hive Food Co., beekeepers known for gourmet infused honey
    • Bastrop — La Fregona, creators of a chile sauce for elotes and esquites

The final contenders will pitch their products on October 8 at H-E-B's headquarters in San Antonio, where judges will determine the top four winning products and award $50,000 to the Grand Prize winner and the "Texas Best" title — an honor that guarantees placement on H-E-B store shelves.

The first-place winner will receive $25,000, the second-place winner will receive $15,000, and the third-place winner will receive $10,000.

Since 2014, H-E-B has handed out nearly $2.75 million in prize money to Texas entrepreneurs. But Quest for Texas Best isn’t just about capital: the winners receive marketing, mentoring, and supplemental support to grow their brands. Fifty-five Texas small businesses that took part in the contest have achieved $1 million in sales and earned a commemorative H-E-B Million Dollar Club belt buckle.
