On this week's episode of "What's Eric Eating," Nicole Bean joins CultureMap food editor to discuss Pizaro's Pizza, the restaurant she owns with her brother, Matt Hutchinson, and her husband, Brad Bean. When Pizaro's opened its first location in 2011, Bean says she resisted her father's calls to join him in the new family business, but she and Brad signed on when the Montrose location opened in 2015.
Since then, she's become someone to watch in the pizza world, earning the coveted Rising Star award at this year’s Caputo Cup during the recent Pizza & Pasta Northeast trade show. Together with her brother, she expanded the menu from just Neapolitan-style pies to include both Detroit (a rectangular deep dish with a rim of burnt cheddar cheese on the crust) and New York (the classic round pie found at restaurants across the country).
Sandler and Bean go through her career and discuss future plans. So, what's next for Pizaro's?
"I'm really interested in cracker crust. St. Louis really sparked my interest when I was in San Francisco," Bean says. "If you've ever had Provel cheese, it's like Velveeta — let's not lie. It's super delicious. It kind of melts down the back of your throat. It's so good. That and I think Chicago cracker-thin is what I'm leaning towards. It's more of a Houston palate."
