Houston Chef's Table: Jeramie Robison appreciates Kata Robata's sushi, Beaver'sbangin' meatloaf & foodie chicks
No one knows Houston restaurants better than the people who run them, own them, and work in the kitchens. In this continuing series, CultureMap is asking our favorite foodie personalities around town where they go for great eats when they're not working.
Jeramie Robison is a Houston import. Originally from Louisiana (with an adorable drawl to match), he followed John Tesar to The Woodlands after working under him in Dallas at Rosewood Mansion on Turtle Creek, taking over as co-executive chef when Tesar called it quits. Now he's the exec chef at La Colombe d'Or, using his high-end hotel expertise to revitalize the dining menu and experience, and designing the menu for the fall debut of Zimm's Little Deck.
We caught Robison on a brief break from his double duty to talk about exploring his new city.
Restaurant for a special occasion: Today is my one month anniversary for living down here, and I'm still kinda checking everything out. I just went to Kata Robata and had the chef's tasting ... it was probably the best sushi experience I've ever had in my life.
Favorite meal: When I was living in The Woodlands, I used to always go and eat the ribs at Jasper's. I hit up Catalan the other day for the Berkshire pork belly with cane syrup and the pig shoulder with confit duck fat. That was incredible.
And Beaver's is a cool spot. I had some meatloaf there ... it was pretty bangin'. I've still got a lot of familiarizing to do, but I'm hanging out with this foodie chick and she's telling me where to go.
Breakfast/Brunch favorite: I've really enjoyed the brunch at Stella Sola. Shrimp and grits — it's pretty tasty. Sundays I usually just like to get brunch and then relax, so that's a big part of it.
Dessert: I don't really eat dessert, I just maybe eat ice cream sometimes.
