Forget Cabo: New replacement restaurant promises a crazy happy hour, live music& better Tex-Mex
There's a new Tex-Mex joint moving into the former Cabo space downtown.
Pepper Jack's Mexican Grill & Cantina is hoping to open at 419 Travis by the beginning of August. Pepper Jack's is an original concept owned by John Bigam, who is collaborating with building owner Merg Meraia.
Meraia told CultureMap that the menu would be similar to Cabo, but that the "food and quality and recipes are entirely different," with some dishes inspired by family recipes. Meraia promises enchiladas, burritos, shrimp, seafood and other standard Mexican grill fare, plus a burger "with a twist" and appetizers that go beyond the ordinary.
Meraia says Pepper Jack's will have an "entirely different" look downstairs, plus 60-inch televisions, a slate of live music and a "crazy" happy hour.
"We're gonna throw some big bait on the hook," Meraia says. "It's going to be like Cabo in the early days."
