First course
Blueberry and eggplant caponata on warm bread and spring pea chawan mushi, ground lamb, labneh and fresh mint

Second course
Potato and asparagus salad, olives, harissa mayo and melted leek
Pairing: Anima Chardonnay, 2011

Third course
Seared Patagonia salmon, smoked salmon and caper bread pudding, salmon roe crème fraiche and fresh dill

Fourth course
Local mixed grill, lamb heart, Bandera quail, cured pork chop with blue corn polenta, corn relish and pepper crema fresco
