Guests will have the opportunity to learn about food and wine pairings from notable wine connoisseur Melba Allen-Buillard. After intensive studies at the Université de Vin (University of Wine) at Suze la Rousse in France, she obtained the title of Sommelier-Conseil, and soon after returned to her native Houston to establish Texas' first wine institute. 

The class will include the following menu:

• Sophia Marie Rose' - Wateroak Farm Pepper Ricotta topped with Strawberry and drizzled with Messina Hof Balsamic Vinegar Reduction
• Private Reserve Chardonnay - Greer Cheese
• Barrel Reserve Cabernet Sauvignon - Bleu Cheese
• Private Reserve Shiraz - Wateroak Farm Herb de Provence Ricotta Toast Point and Cranberry Shiraz Jam
• Private Reserve Port - Chocolate Truffle infused with Port Wine
