Truchard Wine Dinner at Americas River Oaks

Michael and David Cordúa have crafted a menu to accompany the wines of Truchard Vineyards. The evening, which includes a variety of dishes ranging from smoked crab and quail to beef tenderloin confit, includes a special guest appearance by Truchard Vineyards general manager Anthony Truchard II.

First course
Popcorn sweet breads with brown butter, fresh corn tamale, popcorn emulsion, cabbage
Pairing: Chardonnay 2011

Second course
Smoked crab and quail paella, bacon wrapped stuffed quail, corn smoked crab, tempura mushroom, saffron and chorizo rice
Pairing: Pinot Noir 2011

Third course
Beef tenderloin confit with potato soufflé, blue cheese fondue, leeks
Pairing: Syrah 2011

Fourth course
Smoked lamb chop with mole poblano, plantain and poblano bread pudding
Pairing: Merlot 2010

Fifth course
Coconut rice pudding with pineapple chip, blueberry compote
