Each chef in the Signature Chef Series will host a dinner featuring their own carefully crafted, exclusive menu of specialties, along with their personal section of wine pairings. Guests will be able to engage exclusively with the chef and his team.
Chef Ryan Braden's five-course menu includes:
Roasted Beet Salad Frisée
With toasted walnuts, citrus balsamic vinaigrette and Feta cheese.
Pairing: Hesketh, Proposition, Sparkling Rose.
Crawfish Maque Choux
Served with a Mirliton and andouille corn bread.
Pairing: Duck Pond, Pinot Noir.
Pan Roasted Halibut and Scallop
Served with charred fennel, brown buttered white asparagus and truffled asparagus relish.
Pairing: ZD, Chardonnay.
Bone-in Lamb Loin
Served alongside celeriac purée, rosemary and morel ragout and Brussels sprouts.
Pairing: Chateau Franc La Rose, St. Emilion.
Pineapple Upside Down Cake
With whiskey caramel sauce and raspberry cream.
Pairing: Morande, Late Harvest Sauvignon Blanc.
