Each chef in the Signature Chef Series will host a dinner featuring their own carefully crafted, exclusive menu of specialties, along with their personal section of wine pairings. Guests will be able to engage exclusively with the chef and his team.

Chef Jose Parada's five-course menu includes:

Seafood Martini
Jumbo lump crabmeat, lobster and shrimp with Napa cabbage, avocado, hearts of palm and kim chee dressing.
Pairing: Martin Codax, Albarino Spain.

Stacked Pear Salad
Watercress, baby field lettuce, arugula, toasted pecans and hazelnuts, crumbled blue cheese with raspberry vinaigrette. 
Pairing: Cakebread, Sauvignon Blanc, Napa Valley.

Barbecue Shrimp and Grits
Jumbo shrimp sautéed with garlic and Abita beer, served with jalapeño and cheddar cheese grits.
Pairing: Duckhorn, Merlot, Napa Valley.

G's Signature Mixed Grill
Certified Angus beef filet and two Colorado lamb chops with red wine demi-glace.
Pairing: ZD, Cabernet, Napa Valley.

Lemon Meringue Pie
Piled high with brown sugar meringue.
Pairing: Robert Mondavi, Moscato d'Oro, Napa Valley.
