Master Distiller Ruben Aceves hosts a Herradura pairing dinner at Americas River Oaks. The fifth-course menu includes Cordua creations such as carnitas pibil taquito and achiote roasted sea bass with lobster corn fritters. Each dish will be paired with Herradura Tequila, two of which are Private Labels exclusively offered at Cordua Restaurants (Herradura Cordua Unico Tequila and Herradura Cordua Salve Tequila).
First course
Salmon ceviche with crispy rice croquette, pineapple, sesame and scallion.
Pairing: Herradura Silver Margarita.
Second course
Carnitas pibil taquito with black bean refritos, guajillo, citrus, red onion and cilantro.
Pairing: Herradura Cordua Salve Mango Habanero Margarita.
Third course
Lobster and sea bass, achiote roasted sea bass, arroz paella, lobster fennel sauce and lobster corn fritters.
Pairing: Herradura Cordua Unico Tequila.
Fourth course
Duck and quail, house cured smoked duck breast, bacon wrapped stuffed quail, fresh corn tamale, blueberry gastrique and crema fresca.
Pairing: Herradura Cognac Finished Tequila.
Fifth course
Vanilla tour, tres leches, vanilla bean alfajores, crema catalan.
