Foundation Room Chef's Dinner


The Foundation Room hosts a multi-course dinner prepared by executive chef Steven Vanderpool and his culinary team that includes Freddie Cassel, Mario Vidal and Bruce Webster.

Passed hors d'oeuvres
Chipotle duck confit, cotija, tomatillo pork belly mini tostada, smoked chicken, tasso and mini grit cake
Pairing: Honey dew martini

First course
Charred yellow tomato gazpacho, avocado and smoked shrimp
Pairing: Basil, cucumber and vodka tonic

Second course
Seared scallop, mascarpone polenta and truffle butter
Pairing: Sonoma-Cutrer Russian River Ranches Chardonnay

Third course
Cocoa roasted lamb chops, chevre potato gratin, braised kale and cherry demi
Pairing: Peachy Canyon Zinfandel

Fourth course
S'more bread pudding, marshmallow crème and caramel
Pairing: Educated Guess Cabernet Sauvignon
