Domaine Serene Chef Pairing Dinner

Chefs Michael and David Cordua, along with Domaine Serene vineyard owner Grave Evanstad, host a chef pairing dinner. The reception will begin at 6:30 p.m. and seats for dinner will be taken at 7 p.m.

Bacon wrapped dates with maple sherry broth
Shrimp, shiitake and tarragon with corn coulis
Prosciutto and mascarpone puff with truffle honey
Pairing: NV "r" Rose

Foie Gras Tamale
Fresh corn tamale, seared foie gras, candied pecan and agave tamarind glaze
Pairing: 2011 Couer Blanc Pinot Noir

Quail and Crab Paella
Bacon wrapped quail, smoked crab, tempura mushroom, chorizo-saffron rice, grilled romaine
Pairing: 2010 Evenstad Reserve Pinot Noir

Carnitas Pibil
Sous vide pork with lemon guajillo sauce, crisp yuca cake, black beans, queso fresco and citrus salad
Pairing: 2009 Winery Hill Pinot Noir

Center cut beef tenderloin, chimichurri grilled vegetables, pickled onion and bernaise
Pairing: 2010 Grace Pinot Noir and 2008 Monogram Pinot Noir

Tres leches, salted chocolate sorbet, dulce de leche cookie sandwich
