Nicole Ruthier will combine Hatch chiles with her native cooking style. Guests will learn how to roast chiles and how to successfully incorporate them into Asian cooking in a menu that includes grilled lemongrass chicken with roasted chiles in coconut sauce, Filipino spicy salmon salad, wok-seared eggplant with chiles and mint, and Malaysian shrimp fritters.
