Chef Danny Trace will host "Collaboration Farm Dinner with a Southern Drawl," which features dishes made with the bounty of local farms envisioned through culinary lens of Southern cooking. Trace joins forces with James Beard award-nominated chef Rich Landau and his wife, chef Kate Jacoby of Vedge in Philadelphia, to create an innovative menu that is an ode to spring vegetables and the vibrant flavor combinations of the south.
The menu includes an antipasto of farmers vegetables, gumbo z'herbes moderne (Moondog Farm dino kale, mustard, collard and swiss chard greens, buttermilk-fried okra and black garlic "sunset rice"), fresh hearts of palm (avocado, capers, olives, saffron aioli), roasted maitake mushrooms (smoked remoulade, oyster mushroom "rockefeller" fritter), cauliflower and waffle (chicken fried, pimento "cheese" grits, sweet potato waffle and chickory coffee "black eye" pea gravy), and strawberry-sorrel bread pudding (strawberry "quick," sorrel bon bon, pecan pesto).
Through their restaurant and the recently released Vedge Cookbook, chefs Landau and Jacoby have helped transform the landscape in vegetable-centric dining.
Wine pairings are included in the ticket price.
