Churrascos' Chef Pairing Menu "Untapped Regions of Spain"

Chef David Cordúa and beverage director James Watkins have teamed up to create a September Chef Pairing Menu that features delicacies direct from Spain and those evocative of the Spanish culture.

First Course
Cucumber Two Ways, marinated cucumber, tomato, garlic and olive with cucumber and avocado gazpacho
Pairing: Kentia Albarino, Rias Baixas, 2011

Second Course
Beef risotto with sautéed shrimp and popcorn crema
Pairing: BLAU Cariñena, Syrah, Garnacha Blend, Montsant, 2010

Third Course
Pork scaloppine with blue cheese and ricotta ravioli and tomato bianco sauce
Pairing: Juan Gil "18 Meses" Monastrell, Cabernet Sauvignon-Syrah Blend, Jumilla, 2010

Fourth Course
Mixed berry trifle with mascarpone cream and vanilla sponge
Pairing: Liefman's Cuvée Brut, Deep Red Belgian fruit beer
