French Country Wines teams up with Canopy to host a special dinner that features the wines of Provence's Domaine Gueissard. As an extra special treat, the vineyard's young owner and winemaker, Clement Minne, will be in attendance to introduce the wines served.

Domaine Gueissard, located in Sanary-sur-Mer, just outside of the town of Bandol, is one of a growing number of family-owned wineries represented in the United States by Houston-based French Country Wines and its owners Tim Smith and Phyllis Adatto. Minne, who co-owns the winery with his wife, Pauline, graduated from the Wine School of Orange and spent several years as a winemaker at Domaine Tempier in Le Castellet, just north of Bandol. From there he traveled the world gaining experience in different countries as he developed his own style of winemaking. Returning to France, he managed some private family vineyards for a time and then acquired his own vines to begin Domaine Gueissard in 2011.

First course
Grilled baby octopus salad, shaved fennel, herbs, edible flowers, crispy shallots, lemon and extra virgin olive oil.
Pairing: Gueissard Rosé

Second course
Pork cassoulet, confit pork belly, roasted pork tenderloin, flageolet beans and roasted tomato.
Pairing: Gueissard Cuvee G Rouge

Third course
Dijon marinated lamb chops, potato galette, arugula, grilled heirloom carrots and herbed red wine jus.
Pairing: Gueissard Bandol Rouge

Dessert course
Goat cheese mousse, five-spice shortbread crumble with rosé gastrique, orange marmalade and local honey/strawberry sorbet.
