Each chef in the 2013 Landry's Signature Chef Series will host a dinner featuring their own carefully crafted, exclusive menu of specialties, along with their personal section of wine pairings. Guests will be able to engage exclusively with the chef and his team.

Chef Ricky Cruz of Grotto includes five courses:

Gnocchi di Patate Dolci - Homemade sweet potato dumplings, stuffed with ricotta and feta, citrus orange sauce
Pairing: Stellina Prosecco

Insalata Mandorlata - Mixed field greens, tangerines, apples, caramelized almonds, Parmigiano-Reggiano crisps and almond oil vinaigrette
Pairing: Bertani Due Uve

Primo Pranzo
Branzino al Forno con Cavolfiore- Oven-roasted Mediterranean sea bass, served over Parmesan cauliflower and pesto sauce
Pairing: Ruffino Chardonnay

Gazpacho Sorbet with Tomato Crisp

Seconda il Pranzo
Cannelloni di Costola - Short rib and spinach cannelloni with Barolo wine sauce, served with baby vegetables
Pairing: Antinori il Bruciato Baby Super Tuscan

Dolci Misto
Miniature almond chocolate cannoli, strawberry panna cotta and lemon Napoleon
Pairing: San Anselmo Moscato
