2013 Landry's Signature Chef Series: Luis Rubio at La Griglia

Each chef in the 2013 Landry's Signature Chef Series will host a dinner featuring their own carefully crafted, exclusive menu of specialties, along with their personal section of wine pairings. Guests will be able to engage exclusively with the chef and his team.

Chef Luis Rubio of La Griglia includes five courses:

Ricotta Gnocchi - San Marzano tomatoes, onion and mozzarella di bufala
Pairing: Mormoraia Vernaccia di San Gimignano

Black Mission Figs over arugula, Parmigiano-Reggiano and San Daniele prosciutto
Pairing: Verdicchio dei Castello di Jesi "Donna Ginevra," Baldeschi Balleani

Primo Pranzo
Pan Roasted Halibut - Sicilian pesto and roasted summer vegetables
Pairing: Sauvignon "Winkl," Cantina Terlan

Seconda il Pranzo
Veal T-Bone alla Griglia - Nonna potatoes, roasted cipollini onions and fresh black cherry essence
Pairing: Barolo, Fratelli Brovia

Dolce Trio
Zabaglione, Blackberry Tart and Chocolate Nero
Pairing: Giacomo Bologna "Braida" Brachetto d'Acqui
