Each chef in the 2013 Landry's Signature Chef Series will host a dinner featuring their own carefully crafted, exclusive menu of specialties, along with their personal section of wine pairings. Guests will be able to engage exclusively with the chef and his team.
Chef Brian Miner of Brenner's Steakhouse includes five courses:
First Course
Smoked Trout Mousse with Apples, English pea blinis and pickled mustard seeds
Pairing: Terlan Pinot Grigio
Second Course
Charred Romaine Hearts with Parmesan coulis, shaved rhubarb, Texas honey vinaigrette and shallot cracklings
Pairing: Lemelson "Thea's Selection" Pinot Noir
Intermezzo
Hibiscus Flower and Meyer Lemon Sorbet
Third Course
Seared Prawns with Roasted cauliflower, currant and fennel hash, sorrel and ginger purée and sorghum popcorn
Pairing: Villa Annaberta Valpolicella Superiore Ripasso
Fourth Course
Roasted Veal Loin with Pink peppercorn and marrow butter, potato puree and parsnip slaw
Pairing: Suhr Luchtel Cabernet
Fifth Course
Coconut Semifreddo with Pineapple orange gelée and cumin meringues
Pairing: Royal Tokaji
