    New wine bar and restaurant uncorks in familiar Museum District space

    The Museum District will soon be home to a new spot for wining and dining. City Cellars has leased the former Dak & Bop space at 1801 Binz St. for a new wine bar and restaurant.

    Work has already begun to transform the space with new tile work, a new bar top, and other cosmetic changes. Look for an opening in early November, if all goes according to plan.

    Chef-owner Daniel Wolfe tells CultureMap that City Cellars evolved out of his Wolfe & Wine catering company. Originally, Wolfe set out to find a dedicated kitchen for that business, but opted to make the leap to a full restaurant and wine bar once he saw the space. The graduate of the Conrad Hilton College at the University of Houston says he sees the concept as a neighborhood spot that could eventually grow to multiple locations.

    City Cellars will build its food menu around the fare Wolfe has served at a popular series of wine dinners. Originally developed as a way to further his relationships with his rodeo committee, the dinners can feature everything from Chilean sea bass and scallops to a ribeye from 44 Farms.

    Mac and cheese, one of Wolfe’s most popular dishes, will come topped with a rotating selection of meats, including wild boar, pulled pork, and bacon. In keeping with the times, the menu will be available to-go, and Wolfe adds he may also include some of the prepared meals he sells under his Dinner Winners brand. Regardless of the item, dishes are made from scratch.

    “We’re focused on using local ingredients, fresh ingredients,” Wolfe says. “For example we’re working with a company called Bee2Bee Honey; the honey we’re using is pollinated by bees in our zip code. That’s about as local as you can get.”

    Houston honey won’t be the only local ingredient on the menu. Wolfe adds that he prefers to source as much from local vendors as possible, even his hand soap.

    “I went through multiple funding rounds and got rejected countless times,” he says. “What I want to do with City Cellars is represent the amazing talent in our city, the amazing small businesses, and put them on the menu.”

    On the beverage side, City Cellars will differentiate itself from most wine bars by offering both wine and spirits. Wolfe is working with sommeliers Stephanie Franklin and Dominic Byrd on both his wine and cocktail lists. While he isn’t quite read to commit to featuring wines from any specific reason, he does state that City Cellars will use wine flights to help customers dial sample new wines they’re likely to enjoy.

    One thing is certain — Wolfe’s new neighbors are looking forward to City Cellars.

    “We’re getting 10 to 20 people a day walking in the door. A couple times an hour, people walk in, ‘what is this.’” he says.

    “The number one thing we’re hearing is people are so excited we’re coming to the neighborhood.”

    City Cellars plans to open in November.

    Houston real estate developers Radom Capital and Triten Real Estate Partners have announced the first two restaurants coming to The Swift BLDG, their new mixed-use project in the historic Swift & Company Packing Plant that’s located near the Heights Hike & Bike Trail.

    They are:

    • Escalante’s: The Houston-based Tex-Mex restaurant
    • Merit Coffee: The San Antonio-based coffee shop and roaster

    Founded in 1993 by Pat Torres and Kopi Vogiatzis, Escalante’s is known for its upscale Tex-Mex fare such as outside skirt steak fajitas, house made flour and corn tortillas, tableside guacamole, and its signature queso blanco, as well as the fan favorite Bavarian cream–filled churros. A full selection of margaritas, beer, and wine rounds out the experience. At Swift, Escalante’s will occupy a 4,500-square-foot space with two patios.

    “Each of our restaurant spaces takes on unique elements from the communities they serve, and this one is no different,” said John Iannucci, CEO of Mas Mex, Escalante’s parent company. “It’s an honor to share Escalante’s heritage in a place that carries more than five decades of rich history itself. Our family recipes and authentic Tex-Mex traditions have made the brand popular with residents in communities across the city. We’re appreciative of the opportunity to expand into one of Houston’s most up-and-coming and family-friendly areas.”

    As CultureMap reported last week, Merit is making its debut in the Houston market with an outpost at Swift as well as a former Starbucks location near West U. Merit’s physical locations are built with their neighborhoods in mind, giving patrons a place to come everyday. In addition to all the usual espresso beverages, the shop is known for speciality items such as the cereal milk cold brew topped with crushed Fruity Pebbles cereal, strawberry matcha, and hot and iced teas.

    “We’re beyond excited to finally bring the Merit café experience to Houston,” added Merit CEO Bill Ellis. “This is something our customers have been asking for, and we’re thrilled to create new community spaces where our guests can enjoy world-class coffee, thoughtfully designed environments, and genuine connection.”

    On track to open to the public in fall 2026, The Swift BLDG will offer more than 30,000 square feet of office space along with 30,000 square feet of restaurant and retail tenants. The two companies previously partnered on M-K-T, the Heights mixed-use development that’s near the Swift project. Radom is known for a number of other Houston developments, including the Montrose Collective and the historic Tower Theater property and its adjacent buildings.

    “We’re thrilled to announce these exciting additions to the Heights dining scene. We cannot wait for Houstonians to welcome Merit to the city. We’re honored they selected Swift for [one of] their first locations,” said Radom Capital’s Barton Kelly said. “Houston cannot get enough Tex-Mex and we know the Heights will embrace Escalante’s at Swift.”
