Dynamic duo behind EaDo's hottest BBQ joint dish on their steak nights and doing things a little extra
On this week's episode of "What's Eric Eating," pitmaster Alec Varnell and general manager Hoffie Ferreira join CultureMap food editor Eric Sandler to discuss J-Bar-M Barbecue. Located in EaDo, the restaurant opened at the end of 2021 and quickly drew attention for its high-quality smoked meats and massive patio and beer garden.
The conversation begins with Varnell discussing how the restaurant moved on after the departure of its openings chefs and management team. From there, the discussion moves to how the restaurant has refined its concept that involves operating as a traditional barbecue joint during the day and a casual steakhouse at night. Sandler asks Varnell about why J-Bar tries to do a little more than most other barbecue restaurants.
"First and foremost, that's always been John Toomey's dream. He wanted it to be more than a barbecue joint. He wanted to offer dinner, do brunch. He had a huge vision. We're just trying to accomplish his dreams." Later, he adds, "For us, it's a way for us to evolve and get more creative and showcase the talent we have in the kitchen."
