6 questions with Mike Black

Terry Black's co-founder dishes on Houston opening and future hotel plans

Houston barbecue fans are buzzing about the arrival of Terry Black’s Barbecue, which opens in the Heights (1329 N. Shepherd) this Tuesday, August 18.

Touted by Texas Monthly as “the most impressive barbecue chain in Texas,” the restaurant is known for serving its full menu seven days a week for lunch and dinner. Six, 1,000-gallon offset smokers — the first thing diners see once they walk in from the parking lot — help ensure that diners will never have to pass on brisket, beef ribs, pork ribs, turkey, and two kinds of house made sausage. They’re paired with sides, desserts, and the restaurant’s signature black frozen margarita.

Houston comes in the middle of a growth spurt for Terry Black’s and its parent company, Black Family Hospitality. It’s already preparing to open a Terry Black’s in New Braunfels. By years end, the company will add a San Antonio location that will also include a boutique hotel and a bathhouse that may be called The Depths.

Eventually, Black Family Hospitality will add a hotel, bathhouse, and steakhouse to its Houston property. Eager to learn more about the company’s perspective on Houston and its future plans, CultureMap spoke to Terry Black's co-founder Mike Black. Read on for details about the other Houston neighborhood he and his brother Mike considered for Terry Black’s, a few details on the hotel (coming in 2028), and what he recommends first time visitors order.

CultureMap: How did you decide on the Heights as the right location for Terry Black’s?
Mike Black: We looked all over Houston for the perfect location. I really liked a lot of things about EaDo, but unfortunately they were doing a big highway expansion project. So we found this property in the Heights and we just kind of fell in love with it, fell in love with the area, too.

CM: Houston has a well-established barbecue scene. How do you see Terry Black’s fitting in?
MB: When we opened in Austin, there was a ton of good barbecue restaurant. Same thing with Dallas, Fort Worth, even the smaller areas. My hometown of Lockhart is known as the barbecue capital of Texas.

I think we can be very successful here. And of course, there's a ton of other successful barbecue restaurants and really, really good barbecue in Houston. So we're excited to come join the market.

CM: Tell me about Terry Black’s commitment to being open for lunch and dinner every day, because I think of that as a big part of your identity.
MB: Absolutely. It's definitely part of our brand identity. Being open seven days a week for lunch and dinner. When we first went into Austin, everyone was kind of following that Franklin's model. And what I refer to as the Franklin model was, I'm going to be open limited days for lunch. I'm gonna sell out and we're gonna shut down for the day.

We said, we've got to do something different. We want to separate ourselves. Not only that, there's two of us. So we're young, we're hungry, we're gonna grind. My brother and I would split shifts. The first year, year-and-a-half we were open, we worked about 400 days straight. We're putting anywhere from 12 to 16 hour days and we would split shifts.

We would just grind it out, and there was 2 of us, and we could do that. We knew we needed to separate ourselves and be different than some of the other barbecue restaurants there. That's how we would find our nature. It worked out really well for us.

CM: For people who've heard about Terry Black’s but haven’t tried it yet, what do you have to get on your first visit?
MB: When you come to Terry Black’s, it's traditional Central Texas barbecue. You've got to get the Texas trinity — brisket, pork ribs, and sausage. With that being said, what we've started to become known for is what we refer to as the Cadillac of barbecue, the beef ribs.

Personally, my favorite side, shockingly enough, is green beans. It's our second biggest seller. It's a fresh green bean that we actually go direct to the farm. It's a high quality green bean as opposed to something that may come out of a can

CM: We're focused on the restaurant, but I've read that there's a hotel component. Can you tell me anything about that?
MB: There is gonna be a boutique hotel here. It'll have 14 rooms, give or take, and it'll have a steakhouse that we've already branded. Can't release that quite yet, but it has been branded. And there's other elements. We'll have a members aspect of it. We’ll have a bathhouse, a gym, things of that nature. That's still in the in the planning stages.

CM: What's it been like kind of diversifying Black Family Hospitality beyond barbecue?
MB: Growing Black Family Hospitality has been fun. The barbecue's something that we've done all of our lives. So when we jumped into Opal's Oysters [in Waco] and the bowling alley and Glory Roll Sushi [in Lockhart], it was a challenge, but they've been fun and I really enjoy those now at this stage of our career.

The project that most excites me is the bathhouse. We're at a point where we want to do fun concepts that we enjoy going to. Of course, we enjoy going to the barbecue restaurants and the other restaurants that we have, but more experiential type stuff like the bathhouse and jumping into the hotels and things of that nature are what I'm really excited about. It's going to be a challenge, but we've got a really good team.

In this edition of CultureMap’s look at the latest Houston restaurant news, a successful hand roll restaurant continues to grow, a Chinese American restaurant quietly signs off, and a popular Houston chef shows off his Peruvian heritage. Plus, Houstonians can eat cold noodles for a good cause.

Openings and Closings

Houston-based Duckstache Hospitality, the group behind restaurants such as Doko and Himari, is adding three new Houston locations of the hand-roll and sushi bar concept Handies Douzo. As CultureMap has previously reported, the restaurant will be the first dining establishment to open at Central Park Post Oak in Uptown and at 1107 Hutchins Street in EaDo as pat of the East Blocks project. In addition, the company announced plans for a West U. outpost at 3908 Bellaire Boulevard. All three are expected to open in late 2026 or early 2027.

Diners at Maximo can take a culinary tour of San Luis Potosí through the five-course tasting menu.

Comfort Foodies, the Latin-Caribbean and Southern soul food restaurant, has relocated from Cypress-Fairbanks to a larger space in Missouri City. The 3,000-square-foot restaurant seats more than 50 people and adds a full bar with specialty cocktails. Owners Elsa and Jeff Matthews launched Comfort Foodies in 2020 as a food truck. The restaurant also offers takeout, delivery, catering, and frozen empanadas. Comfort Foodies is located at 8731 Highway 6.

Chinese American restaurant Qin Dynasty has quietly closed its location near West U. although the restaurant's website remains active, all signage has been removed from its location at 5115 Buffalo Speedway. Open since 2001, the neighborhood staple was known for dishes such as pork dumplings, chicken lettuce wraps, and spicy and tangy chicken.

Sunday, September 13

Better Together: New Orleans Brunch at Camaraderie
The Heights restaurant is paying tribute to New Orleans brunch culture with a $35 prix fixe menu featuring dishes inspired by iconic NOLA restaurants, including shrimp etouffee from The Herbert Hotel, beignets from Cafe du Monde, and grillades and grits from Arnaud’s. Brunch runs from 10:30 am to 2:30 pm.

Monday, September 14

Keylan Rutledge at The Pit Room Memorial
Hopefully, the Texans first round draft pick will be celebrating a victory over the Buffalo Bills when he makes an appearance at the Memorial location of the popular barbecue joint. In between bites of ribs, Rutledge will pose for pictures and sign autographs for fans from 6-8 pm.

September 18-October 4

Karbachtoberfest at Karbach Brewing Co.
Karbach Brewing Co. brings Oktoberfest to Houston for three weekends with stein-hoisting contests, wiener dog races, live music, German food, and its seasonal Karbachtoberfest Märzen lager. The event runs September 18-20, September 25-27, and October 2-4 at the brewery’s Biergarten, 2032 Karbach Street.

Thursday, September 14

Pepitas Pop-Up at Agnes and Sherman
Craft Pita founder, chef Raffi Nasr, and his mother, Claudia Nasr, are popping up at the Michelin-recommended Asian American diner in the Heights to debut Pepitas, their new Peruvian-inspired pop-up series. For this edition, they're collaborating with Agnes and Sherman chef and co-owner Nick Wong on a menu of Chifa-inspired dishes, including fried wontons with sweet-and-sour sauce; Salchipapas Wong, fries topped with Peruvian sauces and Chinese sausage; Arroz Chaufa, Peruvian-Chinese fried rice with shrimp, chicken, and hot dog; and Lomo Saltado, wok-fried steak with garlic corn rice and fries. Reservations are available via OpenTable.

Tuesdays in September

September Cold Noodles Club
Eight Row Flint's original location in the Heights is partnering with I’ll Have What She’s Having for a monthlong cold noodle fundraiser. Every Tuesday from 6 pm until sold out, a Houston chef will serve a favorite cold noodle dish, with all proceeds benefiting preventive healthcare services for hospitality workers through IHWSH. The lineup includes Christine Hà of The Blind Goat on September 15, Niki Vongthong (formerly of Hidden Omakase) on September 22, and Suu Khin of Burmalicious by Suu on September 29.

New menus and experiences

After being discontinued during the 2020 pandemic, Noon Mirch Kitchen + Bar has brought back its Indian lunch buffet. The Clear Lake restaurant serves its buffet daily from 11 am to 3 pm for $17 Monday through Thursday and $20 Friday through Sunday. An expanded Grand Buffet will be offered on holidays and special occasions for $25. To mark the return of the buffet, the first 100 buffet diners each day will receive a complimentary mimosa.

Diners at West U. Mexican restaurant Maximo can take a culinary tour of San Luis Potosí through the five-course tasting menu inspired by chef Adrian Torres’ home state. Highlights include zacahuil, a banana leaf-cooked communal tamal that the James Beard Award winner has reimagined to feature a masa marbled with mole rojo and served with pressed short rib. The menu is $50, with optional wine or cocktail pairings for $35. A donation of $5 will be made for each tasting menu to Caritas in San Luis Potosi, a charity that provides food and clothing to those in need.

51fifteen in the Galleria is launching a new Friday night experience for those who like to get an early start on the weekend. From 6-10 pm in the Tulip Room, a live DJ spins tunes from the ‘70s, ‘80s, and ‘90s, while diners can order food and drinks from the bar menu in between hitting the dance floor.

Warehouse 72 is celebrating its seventh anniversary with “7 Years, 7 Ways to Experience Warehouse 72,” a lineup of weekly dining experiences. Highlights include Taco & Tequila Tuesdays with three tacos and a margarita flight for $39, Wine Wednesdays with 30 percent off wines, Thursday steak specials, and a seven-course tasting menu for $85 on Fridays.

Saturdays feature monthly cooking classes with chef Jaime Salazar, while Sundays offer a family-style dinner for four for $80. The restaurant has also added lunch, including poke and Peruvian chicken bowls, and customizable bento boxes. Patrons who complete five of the seven experiences will receive an invitation to an exclusive VIP anniversary celebration at the end of the year.
