Chef Thomas Bille blends his Mexican heritage with the techniques acquired at some of Los Angeles' finest restaurants to produce dishes that transcend Belly of the Beast's humble setting. While the restaurant has become known for its birria tacos, diners shouldn't overlook the ceviches and weekly specials that showcase Bille's skills.
