The revamped kitchen and menu at Armadillo Palace allowed Levi Goode and chef David Luna to further draw upon the Goode family heritage in both the American South and South Texas. The results include everything from homemade biscuits and redfish on the half shell to a spicy skirt steak stew (on the menu as Kenedy Ranch Carne Discada) and the show-stopping roasted pig’s head carnitas. The changes, along with first rate cocktails, make Armadillo Palace equally appealing as a place for a happy hour bite or a more elaborate dinner.
