There are certain things that can't help but catch your attention: The bass line to "Billie Jean," an engagement ring someone could ice skate on, any combination of the words "Prada" "sample" and "sale." Same goes for a sign that says "pizzeria coming soon."
Volare Original Pizzeria hung out their shingle next to the Hot Bagel Shop on Shepherd back in September and is set to open in December, offering "artisanal-style Neapolitan pizzas, but with the crispy crust of New York-style pizzas."
The boutique-sized pizzeria — between the dining room and the outdoor beer garden in back, Volare will seat only 60 — will also offer take-out and, eventually, delivery.
Owner Cara Cox says that she was inpsired to open Volare when she couldn't find the kind of New York City pizza she loved in Houston and has partnered with chef Ara Malekian to create the Volare pies. Malekian owns the food truck Aracan The Roaming Kitchen and worked with legendary chef Wolfgang Puck to create Puck's pizzas.
Bringing in a Woodstone pizza oven, the rotating menu of 10 pizzas will include classics like margherita alongside unexpected combinations including brussels sprouts with smoked pork belly. There will also be panini, crostini, meatball and house-made burrata.
Equally exciting is the wine list curated by Antonio Gianola, one of Houston's foremost wine guys, that will include several wines by the glass in addition to a selection of local craft beers and house-made Italian sodas.

Be careful, Houston: With wood-fired pizzas and craft beer (but no wine, sadly) delivered to your door, it might hard to find a reason to leave the house.
