In the process of creating Cowgirl Tacos, her catering company in Paris, Ellise Pierce, aka the Cowgirl Chef, developed a cuisine that marries the spice of Texas with delicate French traditions. She will demonstrate her Franco-Texan summertime menu including: Texas Killers and Champagne; Minty Cantaloupe Soup with a fruity, dry Sauvignon Blanc; Roasted Salmon with Kalamata Olive Salsa over Baby Spinach served with a Crozes-Hermitage Burgundy; and Peanut Butter-Chocolate Soufflés.
